I know it is nearly impossible to gain insight on a cat. However.... I am hoping to figure out this behavior.
My baby is 14 years old now, and showing signs of dementia I suppose. At first it started with just sitting at the top of the stairs meowing at... nothing. Now she has moved on to carrying around rolled up socks and meowing.
What the heck could she be thinking the rolled up socks are?

I don't think there is much thinking things through with cats.
Its either "shock and awe" or "confuse and mystify".

They say animals can have a false pregnancy. So maybe her dementia is bringing out that effect and she thinks she is walking around with kittens?

Have you taken her to a vet lately for a checkup?

The stair thing: Maybe her vision or depth perception is going and she is having trouble navigating up and down; or arthritis makes her "knees" hurt going up and down?
The sock thing: No idea, but Chloe has done the same thing almost her whole life with this little Thing One doll/toy she's had since she was a baby. She meows when she is looking for him, and when she is carrying him around by his head - it is a pitiful sounding cry that she only makes doing those two specific things; also at times she seems to be lecturing or chewing him out. I've always thought it was a momma cat to kitten type behavior but have not been around a momma with babies since I was very young. She was spayed at 5 1/2 - 6 mths. during her first heat and never had babies.

She gets around fine still. She was spayed as a a kitten and never had babies. Hmmm.... Just another little quirk that makes her awesome!

Many years ago we used a vet who believed a female cat or dog should have one litter before being spayed.

It's funny how cats get attached to certain things/rituals. My Rusty (male) was only 8 months old one Christmas when he kept taking a little Holiday teddy bear (6 inches or so) with a Santa cap on, out from under the Christmas tree. It was in a small sleigh with wrapped packages. I kept putting it back and he kept taking it out. Finally I just gave it to him as a toy. Well, 8 years later and the little bear is a bit mangled, stuffing coming out in some spots, but we find it all over the house in different places.
Sometimes if the cat is in the family room with me, I'll take the bear and fling it the air and he goes crazy with it, batting it around, throwing it up in the air himself and jumping at it, and then he will lie over the bear as if to hide it and he purrs so loud. He has so many cat toys that he just ignores and will not touch that I just don't buy them anymore. He received a stocking for Christmas last year from my sister and he snubbed everything in it. I've tried to entice him with the wands that my other cats would go crazy with, but he isn't having any of it. He gives them a half-hearted whack and then turns away.
I guess he was just determined that the Santa bear was going to be his from the first time he saw it. I hope the bear can survive without getting split open or totally destroyed because apparently there is a strong attachment there.

That bear may be stuffed with something that just smells wonderful to Rusty! With things like that being imported from all over the world, you just never know what was put into that particular bear.

So true. Last Christmas my guys got a mixed bag of jingle balls and mice. The mice were all the same except different colored ears and tails and the purple one was missing his tail. Quincy has never liked soft toys - the jingle balls were always his favorite but he picked out that purple mouse as his baby. I've had to restitch his seams a bunch of times now and the others all look new.
