Pork Rinds! I bought some for a recipe to coat chicken, but now I can't find the recipe. And the bag is half gone already anyhow. I doubt that I ever bought a bag to snack on because of the fat. But they are 0 carbs.

I use ground pork rinds to coat chicken and pork chops. Used the BBQ ones last time and they turned out really good. Mission has a 0 Net Carb tortilla shell in regular and sun dried tomato. They are both really good and good to grind up if you need something for meat loaf and the like. I've lost 15lbs since the first. I eat a lot of eggs, hamburger and canned chicken.

Be sure to read the nutrition info on the low carb/keto recipes. A LOT of them are really high in sodium. For anyone watching carbs AND sodium, try pecan or almond flour as a coating. You'll probably need to add some seasoning though. Salt free cajun seasoning works really well.

It's always a good idea to read the ingredient list. I don't restrict sodium, but I don't eat starches or processed oils. It's best, as much a possible, to eat the least processed foods you can find.

Yes, the Keto diet is usally around 10lbs in the first week before it tapers off. I lost 11 in the first week. Carbs hold a lot of water, so since carbs are restricted the body purges a lot of water, so the first week is mostly water weight. I only lost about 1.5 lbs my second week and 2.5 the third, but I've lost about an inch or so in my waist. My blood sugars have been amazing, so my doctors are happy with those results. In fact, I have not had to take one of my insulins at all.

It took me a year to lose 25 pounds, but I was just limiting the sweets. I didn't start to watch my carbs until 3 months ago. I am kind of stalled right now since my endocrinologist told me to eat every 2 1/2 hours.
Are you on any of the Facebook keto and low-carb groups? I am constantly printing out recipes and adding products to my grocery list.

Just read that white potatoes should be boiled and then cooled 24 hours before eating them. That will lower the glycemic amount by about 40%.
Then they can be eaten cold or reheated.

I've heard that about pasta too. It's better to eat it the next day. I can have a little bit of it every now and then.
Potatoes are the one thing I cannot have in any way, shape, or form...and I REALLY miss baked potatoes. They spike my blood sugar however they are fixed, and even if I have them the next day. Fortunately bread is not so bad. I can have a slice a few times a week without problems.

Hope it works for pasta. I gave all of my white pasta to my daughter and bought whole wheat pasta. Then I learned to count carbs, and whole wheat is also high.
Since I am not diabetic, I am still trying to figure out how many carbs are too much! The only times that I have had problems are the days when I get my chemo. I just don't know what to eat when I get home. A half sandwich or a protein bar are okay during my chemo. But when I get home, I have a reaction to my dinner. Friday is chemo day again.

Yes, I think. I was considering stopping at Chick-Fil-A on the way home and getting the grilled chicken nuggets. Or do you have a better idea? The last time after chemo, I ate a small bowl of my daughter's ham, potatoes and green beans. And I got the chills and shakes. But I don't think it was because of the ham.

Meat won't affect your blood sugar like carbohydrates, so it might be worth trying that. Potatoes would raise your blood sugar. If it's blood sugar swings that are causing the shakes, I'd suggest avoiding potatoes, grains, and sugars.

Thanks. I think I will pick up a Walmart rotisserie chicken on Thursday. Chick-Fil-A always has a line and I don't have much time to get home before I get hit with the problems.
So far, sugar and carbs cause problems.
I usually get out of chemo at 4:30, but I have to go earlier this Friday. Can't imagine going to bed at 2:30 PM.
Ugh-tonight I have to drink the barium sulfate junk for my CT scan tomorrow. A bottle of chalk tonight and one tomorrow. But it is nothing compared to what Val just went through.

They told me they were going to do a contrast test and my first thought was "oh crap not the nasty stuff that makes you gag!" Ends up it was adminstered in the IV. Whew. I'll take what I had over nasty tasting liquids and chemo any day.

These are great and made mostly of veggies. Granted that the chocolate ones are higher in carbs and calories, they make a tasty snack. Walmart has them for 6 for $5.98.

I get those superfood veggie cakes all the time. They make an easy and quick breakfast on mornings I really don't want to cook anything. The superfood veggie one has net 7 carbs and 80 mg sodium for one muffin. The frittata has 200 mg sodium and net 4 carbs per muffin. The double chocolate muffins aren't all the low in carbs, clocking in at 18 net carbs and 150 mg sodium per muffin. But the ingredients are better for you than a regular muffin Same for the blueberry oat muffins - 18 net carbs per muffin. They do make a Keto line of muffins, averaging 4 net carbs per muffin. I haven't seem them in the stores here yet though.

Walmart doesn't have any more kinds of that brand. Will keep looking. It seems like I can get away with about 25 grams max of carbs per meal. But at least I can't go overboard with them out of fear of fainting.

I just discovered Lavash flatbread by Josephs. I got them last week and they don't have a bitter taste like some pita breads do. The pieces are huge- about 11" x 8". I cut one in half and it is only 6 carbs. Unlike the smaller pita breads, the lavash are plenty big enough to wrap up my morning omelet.
So I went back to Walmart today to pick up some more, since there usually aren't very many pita/lavash choices. I was shocked to find about a 15-foot length of pita bread choices! Tons!
It sure must be popular now, but I wonder if they will all sell before they expire. But the lavash was still in the bread section.
