Please note: I wrote up these instructions for a friend who doesn't cook much, so that's why there's so much explanation.
Cauliflower Crust Pizza
Makes two small or one medium pizza.
1 1/3 cup finely grated cauliflower * 1 1/3 cup shredded mozzarella 1 egg
Pizza sauce More mozzarella Toppings of your choice
*You can grate fresh cauliflower or buy it frozen. If you're buying frozen cauliflower it's usually labeled "riced" cauliflower. It should be just plain cauliflower with no added ingredients.
Frozen cauliflower will need to be thawed first. I do that in a small frying pan on medium heat, spreading it out, stirring it occasionally. This will also dry it a bit if there's a lot of water in it.
Pre-heat oven to 450°F. If your oven runs high, you might want to set it a bit lower.
Beat the egg, then add the other ingredients. Mix well. It will be wet, but If you think it's too wet, you can add a spoonful or so of grated Parmesan.
To avoid sticking, put parchment paper on a cookie sheet, dump out the "dough" and form your pizza crust on the parchment paper. You want it fairly thin, with no bare spots. Build up the edges just a bit. If the edges taper off, they're likely to burn before the rest of the crust is cooked.
If you're making one small pizza, use approximately half the dough and put the other dough in a container in the refrigerator.
I bake the crust for 10-12 minutes when doing the small size (half of this recipe). Check it after 10 and see what you think. It should look like a pizza crust (with some dark spots). If you're using the whole recipe it would probably take a couple of minutes longer.
When it looks cooked, remove it from the oven (don't turn the oven off) and add the toppings. Start with less pizza sauce than you think you need. It seems to go further than you would expect. Add more mozzarella and whatever toppings you like. Bake until cheese is melted. This might be as little as one minute.
I like pepperoni, but I cut the slices in quarters first, so they're more proportional to the size of the pizza.
I've found that the 8oz bag of shredded mozzarella is the right amount for this recipe. If you want more cheese you might want to get a bigger bag.

Since I can't have "regular" cake anymore, I found this. It's a fairly good substitute. I use the cake mix from scratch, and I usually do 1/2 recipe in a brownie pan (7" x 11"). I'll post the 1/2 recipe I use too.
Sugar Free Texas Sheet Cake Ingredients Chocolate Cake From Scratch • almond flour 2 cups • coconut flour 2 tablespoons • 1 teaspoon baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon xanthan gum (optional, see notes) • 10 tablespoons unsweetened cocoa sifted • 1/2 teaspoon sea salt • 1 cup swerve granulated sweetener • 1/2 cup avocado oil (I use canola oil because it's what I have) • 6 eggs • 1 teaspoon vanilla • 4 tablespoons sour cream • 1/2 cup almond milk • baking spray Frosting • 1/2 cup unsalted butter • 1/3 cup heavy cream • 4 tablespoons unsweetened cocoa • 1 cup chopped pecans • 1 cup Swerve Confectioner's Sugar • 1 teaspoon vanilla extract • 1/2 teaspoon sea salt • 2 tablespoon whole milk (I skip this) • 1/2 cup unsweetened coconut optional • Kitchen Tools • USA Quarter Sheet Pan (9 x 13) Instructions Make Box Cake or Make Cake From Scratch 1. Spray a quarter sheet pan with baking spray. 2. If using Swerve Boxed Cake Mix, Prepare batter as directed and pour into baking sheet. Bake for 15 minutes at 350 degrees. Center should spring back. 3. As soon as cake it out of the oven, make glaze topping and pour warm topping over warm cake. Chocolate Glaze Topping 1. Combine the cocoa, cream, Swerve and butter for the frosting together in a saucepan. Do not put butter in first. Do not melt butter before adding other ingredients or it will separate. Continue stirring. 2. Bring to a slow boil. 3. Remove from the heat and stir in the salt and vanilla. 4. Add two tablespoons of milk if needed. Stir in pecans. 5. Pour over cake. 6. Cool and cut into 24 small pieces. Chocolate Cake from Scratch 1. Mix all dry ingredients, except Swerve, together including sifted cocoa. Set aside. 2. Mix oil and Swerve together. 3. Add eggs one at a time, until thoroughly incorporated. 4. Add vanilla. 5. Mix milk and sour cream together. Add to egg mixture. 6. Add dry ingredients to these wet ingredients. 7. Bake in quarter sizer sheet pan for 15-20 minutes, until the center is 210. F. 8. Once out of oven, make topping and pour over warm cake. 9. Do not make the glaze topping until the cake is out of the oven. Notes Re: Xanthan Gum: It's not necessary. It does help to keep cake from being too crumbly, so I add a touch to my keto baked goods. Wow-that is a lot of ingredients! Looks good though. It's not bad. It's actually the best cake recipe I've tried yet...and I've tried A LOT of them. Once you get (or have) all the stuff it goes real quick.

Just made this and love it. I don't have a waffle maker yet, so just made it in a non-stick skillet. I did add a slice of sharp cheddar cheese. I made half of the recipe.
Keto Wonder Bread Chaffle
Diet: Diabetic, Gluten Free

If you like fried okra, it appears you can make fried okra in an air fyer and you don't need the batter. I made this last night and it was really good: lowcarbafrica.com/air-fryer-frozen-okra/Don't make the layer too thick in the basket, or it will take longer to cook and it won't be as crispy.
