whiteonricecouple.com/recipes/tomato-and-corn-soup/Pretty good. Cheap and easy too. I embellished, I made a double batch and used one can diced tomatoes and one can rotel tomatoes with green chiles. I also substituted coconut milk for the dairy, but next time I think I'll use the higher fat canned coconut milk for a richer texture. I also added a drained can of low sodium white chicken breast for some protein. Beans would do the same thing (and be better I bet) but I didn't have any in the cabinet.

It looks pretty disgusting with all that stuff floating around.
I am a knife and fork eater. Only eat ice cream with a spoon.

I will never eat canned tomato soup again! I made this a few months ago when my local fruit & veggie place had a big package of over-ripe tomatoes marked at $2.99 (like 8-10 tomatoes), and had my son - who declared he didn't like tomato soup - eat a bowl. He is hooked now too. happyhooligans.ca/best-homemade-tomato-soup-recipe/I did modify it a bit, like I didn't use the garam masala because I didn't have any, (I don't even know what it is). And I used a bit more butter and substituted milk for the water (to make it more like cream of tomato soup). And I used a little dried basil because I didn't have any fresh. Sometimes I will also add stuff from my fridge, like the little bit of a jarred vodka sauce I had hanging around, and a small amount of diced tomatoes that were probably never going to be used for anything. It seems to always come out the same - well except when I used just a little bit too much garlic. At the end, I used our Nutri-Bullet to blend it all up, doing it in 2-3 batches. Smooth and creamy. Yum.

Ah ha. I found the chocolate ones. Unfortunately the stores carrying them are not convenient. Or that could be fortunate. If the chocolate is as good as the peppermint, if it's inconvenient to buy them I won't buy them so often. A good thing.

Val I think you mentioned some dairy issues but there's a brand new custard place that opened about a month ago. It's on mckellips just past stapley. Building has a bit of a vintage drive through vibe. We've only been twice, got the apple pie concrete and apple pie Sunday. Would love to visit more often but we're both watching our waistlines. Sigh. Oh... it's Andy's Custard 😁

Here is my Tuscan White Bean Soup - allrecipes.com/recipe/68361/white-bean-soup/ (I add spinach, which is why I call it Tuscan) And the way I make it: olive oil (just drizzle some in pan, I don't measure) 1 yellow onion, chopped 1 large carrot, chopped 1 (10 ounce) can golden corn or frozen or fresh (a cup+ or two ears fresh with kernels sliced off) 4 cups vegetable broth (1 carton) 1 (15.5 ounce) can white beans 1 can diced tomatoes with Italian spices spinach (fresh (a few handfuls) or frozen (1/4ish brick)) Parmesan cheese to sprinkle on top when serving Heat oil in a large stock pot over medium-high heat. Saute onion until tender, approximately 5 minutes. Stir in carrot and corn, season with salt and pepper, and cook another 2 to 3 minutes. Pour in vegetable broth, beans, tomatoes, and bring to a low boil. Reduce to a simmer, cover, and cook approximately one hour. Sometime before the one hour is up, dump in the spinach - earlier for frozen or last ten minutes or so for the fresh. Use an immersion blender to puree desired amount (I do enough that the broth no longer looks clear but there are still some chunks - it is not an attractive soup). It's pretty flexible as far as amounts of things and I use fresh, frozen or canned - usually I use the canned tomatoes with seasoning already in them though so I don't have to add the spices. Original recipe calls for 5 cups of broth but the container only has 4 cups. I've added water but imo that makes it too watery, so I just go with the 4 cups - you can always thin out a bit more if it gets too thick with only 4 cups

And here is the Minestrone www.bhg.com/recipe/minestrone/I pretty much follow the recipe except use vegetable stock to make it vegetarian and substitute a yellow onion for the yellow pepper because I don't really like peppers and I always have onions on hand (I haven't made in awhile, but I think I probably saute the onion a bit first in olive oil vs. just letting it boil raw along with everything else). Sometimes I throw in some string beans in place of the spinach.

He won't eat anything that came out of the water. No fish, shrimp, crab, not even tuna. Years ago when we were engaged we were having our first Christmas with my family. It was a nice dinner, everyone in their Sunday best. We started talking about picky eaters so of course I had to say "Wesley won't eat anything that came out of the water." My elderly aunt piped up, loudly,, "Aren't you glad you didn't come out of the water?" Half the table spit their food out in shock. Wesley wanted to crawl under the table and I couldn't quit laughing. I don't think she meant it the way it came out but oh what a memory!

We make a lot of stracciatella which most people know as Italian wedding soup. I probably make a dozen variations. Tonight it’s tiny chicken meatballs and kale and bean together in broth. Sometimes it’s spinach or escarole with vegetables and tiny meatballs. Sometimes it has pasta and sometimes it doesn’t. And sometimes it has torn egg like egg drop soup ( which is where the name came from).
I find these type of soups with a little tiny meatballs are easy to make and a good one pot meal for during the week especially in the winter. We have been having some really extra cold days and I’m questioning whether not I want to live in a winter environment anymore. I really don’t like the cold, but soups help LOL

Easy taco soup
1 package Ranch powder dip 1 package taco seasoning 1 can pinto beans (rinsed and drained) 1 can mild chili beans 1 can rotel 1 small can diced chilis 1 can whole kernel corn 2 pounds hamburger meat 2 cups water (though I add more to make it last longer and more soup like)
Brown hamburger meat and add to a large pot with all other ingredients, simmer 20 to 30 minutes

Yum. This is an Indian spice. Garam Masala is basically a bunch of different spices mixed together, and it's a staple in Indian cooking. The mix is also different depending on the region - Northern, Southern India. Cumin, coriander, cardamom, black pepper, cinnamon, nutmeg are some ( or all at times ) of the ingredients. I make Rajma Masala (Indian kidney beans) and I go half and half with it. I'll infuse olive oil with coriander, cloves, and black pepper and use that in the beginning. I also add Garam Masala if I have it. If not, then I put the spices together myself. The basmati rice is absolutely my favorite.

I went to a (cover your eyes, kritter) Soup Swap party on Saturday. Everybody brought different soups for tasting plus extra quarts for swapping. So many great recipes! My favorites were strawberry gazpacho (just the right balance of sweet and spicy) and lentil-kale.
I made carrot-ginger soup. It's vegan and gluten-free but has a smooth, velvety texture and lots of flavor. It also freezes well. Here's the recipe:
- Saute 1/2 cup each of onions and celery in olive oil in a large stockpot - Add 2 cups of carrots, 1 cup of red potatoes (skin on), and cover with water - Boil, then simmer until carrots are tender, stirring periodically - Immersion blender time! Whuzzzz-whuzzz-whuzzz ’til pureed (thin with more water as needed) - Stir in one teaspoon (or more) of freshly grated ginger and simmer some more - Salt and pepper to taste - Garnish as desired (parsley, thyme, more ginger, creme fraiche, etc.)
