I fixed this today: www.geniuskitchen.com/recipe/ratatouille-in-the-crock-pot-52757I had to tweak it a little as I was missing a couple things - I used one orange bell pepper instead of 2 green (all I had), 1/2 yellow and 1/2 zucchini squash instead of all zucchini, one tomato (all I had), added 4 stalks of celery (to use them up) and omitted the salt. Tripled all herbs except garlic (it already has like 5 cloves) and used 2 small cans tomato paste instead of just one. Added 1/2 lb browned crumbled mild breakfast sausage browned in sriracha oil between the layers. It makes about 8 servings as a side dish, but 4 servings as a main dish with the meat added. It was very good, even without the cheese! You can make it just veggies as a side dish, add beans of your choice (instead of the sausage), for protein and as more of a main dish. One reviewer placed 4-6 skinless boneless chicken thighs between the layers. I may try that. Next time I make it, I'm adding mushrooms and fresh green beans.

CROCK POT ROAST
2-2.5 pound Eye Roast ( a little larger is fine) 3 cloves garlic (1.5 tsp minced garlic from jar) 1 tsp oregano (heap it a bit) 2 tsp Lowry’s Season Salt (don’t overdo it as it will be salty) ¼ tsp Black Pepper ¼-1/2 tsp Red Pepper flakes 3 beef bouillon cubes Carrots Celery Onions Potatoes a little water
Spray crock pot with PAM. Place vegetables on bottom. Mix in the seasonings and bullion cubes. Place beef fat side up on top of the veggies. Add water. Cook in crock pot on low 8-9 hours.
My Aunt Mary used ½ tsp rosemary and browns the meat first…
I like to open the crock pot a few times and baste the meat with juices even though they don't recommend it.

May I suggest lowering the salt to 1/4 tsp at the most? You do need some salt with beef or it will be tough and tasteless, but with the bouillon cubes (which are HIGH in sodium) you can easily reduce the salt. If it's not salty enough, just sprinkle some on your serving on your plate.
You can also replace the boullion cubes with balsamic vinegar if you want to further reduce the sodium.

Since DH is on a low sodium diet, instead of seasoned salt, I use my own mix of onion powder, garlic powder, pepper, paprika, and a little bit of ground red pepper. We barely miss the salt.

Put around 1 1/2 pounds of boneless chicken in the crockpot Pour 16 oz jar of salsa or picante sauce Cook on high for about 3-4 hours Shred the chicken with two forks Cook a bit longer for the flavor to go through the meat Serve over rice
Leftovers are great in a flour tortilla shell

I decided I should probably make a meat dish since I had some frozen chicken. I made this today in the instant pot but it also has crockpot directions. It’s no fuss. Just dump it all together. One of the best dishes I’ve made and I wouldn’t change anything. I did have to sub curry powder for turmeric since I didn’t have any on hand. pinchofyum.com/instant-pot-coconut-tandoori-chicken

My first few times I used the crock pot, but since then I’ve just done it in the oven, putting the cheese on top the last few minutes. I use a chunky salsa so I can “get credit” for a vegetable. I think I will try it with the rice, though.

I also only used 1 lb turkey, mainly because that's all I had on hand. In retrospect though, only using 1 lb reduces the sodium a good bit.

I always add balsamic vinegar to my pot roast. Do take the time to sear the meat - it makes a HUGE difference.

I did! It's got another hour to go. I put the crockpot out on the patio, the yummy smells are sometimes too much to handle. Especially when you're hungry.

My fav that I found on Facebook.....
Put a rump roast into crockpot, sprinkle on McCormick Au Jus Gravy dry mix, and a packet of dry Hidden Valley Ranch mix. Add some water, cook on high for 6-8 hours.
It tastes great!
The recipe does call for a few pepperoncini, but I don't use those.

That sounds good but I suspect there's a lot of sodium in those little packets. That's why I like the balsamic vinegar for flavor. For the last few months my outer ankles have been a bit swollen so I've been somewhat monitoring my sodium intake until my physical next month.

Now Walmart has been out of the Au Jus.
Yes, it is high in sodium. But for some reason my sodium has been too low, and my PCP was worried. So I self-medicated with potato chips and it worked!!! LOL. So I "force" myself to eat a snack bag of chips daily.
My sodium is now in the normal range, but I still have to see a nephrologist for further tests.
Balsamic vinegar sounds good, though.

Easy slow cooker recipe for green chile chicken. The chicken by itself is decent, but the chicken REALLY GOOD if you use it in another recipe after it's cooked: i.e., chicken enchiladas, chicken quesadillas, chicken tetrazzini, chicken alfredo, etc. If you want minimal spice, use mild or medium green chiles. For more spice, use hot green chiles or canned diced jalapenos. You can also sub boneless skinless chicken thighs for the boneless chicken breasts. mytxkitchen.com/crockpot-green-chile-chicken/I didn't have any cumin on hand so I subbed Penzeys Adobo instead and added some roasted garlic power to the slow cooker. You can make this low sodium by just looking at the sodium content of the green chiles. Some brands are insanely high, others are reasonable. I use Rio Luna Organic. Lowest sodium I've found so far.

If you like using the onion soup mix in recipes but don't want the sodium, try this: www.thecountrycook.net/homemade-dry-onion-soup-mix/Works great in recipes calling for regular (sodium laden) onion soup mix. I've also made it using chicken boullion, for a slightly different flavor. Neither was all that good as a dip, though. IMO anyway. Did you know Campbells now makes no salt added cream of mushroom soup, cream of chicken soup, and tomato soup? The chicken and mushroom are good in assorted slow cooker recipes.
