I like this one. It's easy and takes 5 minutes. 5 cans fruit of your choice, drained 1 packet vanilla pudding mix (regular or sugar free) Dump, chill, eat.
(I use mandarin oranges, tropical canned fruit, pears, peaches, and one fruit cocktail with the extra cherries).

Made this the other day, between my 19YO & DH it was gone w/in 24 hours. I liked it, but when I make it again I'm going to add a bit of lemon juice & zest to the actual cake batter. Tabbouleh Weight Watchers Points: 3 points per 1 cup serving
Ingredients
1 cup Bobs Red Mill Bulgur, Whole Grain, Cracked Wheat 15 Points
1 cup water
2 1⁄2 cups fresh parsley 0 Points
5 medium scallions 0 Points
2 1⁄2 cup(s) peeled, sliced cucumber 0 Points
1 cup grape tomatoes (quartered) 0 Points
1 Tbsp kosher salt 0 Points
3 Tbsp fresh lemon juice 0 Points
2 tsp black pepper 0 Points
2 Tbsp Kroger olive oil 8 Points
Instructions:
Cook bulgur wheat as instructed (1C bulgur with 1C water). Allow to cool to room temperature.
Chop parsley, cucumber, tomatoes, and scallions. Place in bowl. Sprinkle with salt and pepper. Squeeze 1/2 lemon on top.
Add 2 tbsp olive oil to cooled bulgar Add to bowl with chopped vegetables Stir/toss until well blended Chill

Chickpea Salad
Can of chickpeas, drained, rinsed, and mashed 2 heaping place spoons of mayo (i like the olive oil kind) Generous squirt of brown mustard 1 or 2 heaping teaspoons (the kind you eat with, not the measuring kind) relish 1 or 2 chopped hard boiled eggs Mix together
This is supposed to be a mock tuna/vegetarian substitute. It doesn't taste like tuna but is good and fills that niche. I like it on the croissant rolls. The more you mash up the chickpeas the better - i start with a potato masher and finish with the back of a ladle - a food processor would probably work well too.
