Here's a chicken recipe that my kids and i love (DH, as I've mentioned before has an 8 year old's palate so he won't eat this) and is quick to make. If you eliminate the bacon (which I usually do, but I do use some bacon grease for sauteing) and use the reduced sodium chicken broth, it's kinda low in sodium. I serve it with either rice, mashed potatoes or noodles to sop up the lemony sauce, but it's good on it's own too:
Creamy Lemon Chicken with Bacon and Asparagus
1 bunch thin asparagus trimmed 4 slices bacon cut into 3/4" pieces 1 pkg (24 oz) chicken breast cutlets 1/2 tsp lemon pepper 1 can (14.5 oz) reduced sodium chicken broth 2 tbsp all-purpose flour 1 lemon, cut into wedges Fresh ground black pepper
* Heat 1/2" water in skillet. Add asparagus and cook 3 minutes. Drain and rinse in cool water. * Meanwhile, cook bacon in a large heavy skillet over medium heat until crisp, 8 minutes. Remove to paper towels. Save 1 tbsp of drippings * Season chicken with black pepper and lemon pepper. Cook in hot drippings over medium heat for 3 minutes, turn cook 4 more minutes. Remove from skillet. * Whisk together broth and flour. Add to skillet and bring to a simmer, stirring. Add chicken & asparagus. Cook 2-3 minutes over med-low heat until chicken is cooked through (165 degrees) and asparagus is warm. Squeeze lemon wedges over dish and sprinkle with bacon.

Greek Lemon Chicken and Veggie BakeEasy chicken bake. I've used whatever chicken cuts are on sale and they all come great. If you can get skin on (breast, thigh, whatever) it's better because the skin crisps up. I also add mushrooms, and triple the herbs (don't triple the lemon juice however). Salt optional, I add mine at the table. I use a really large baking sheet and put all the veggies on it, with two chicken thighs (leaves more room for veggies!). My oven won't hold another pan once that one is in, so I bake the other chicken thighs in the tabletop convection oven. The veggies need some of the chicken broth to get really tasty.

Has anyone tried Frontera sauce? I made chicken fajitas with the ground beef taco sauce. Copied from Tic Toc video. Sheet Pan chicken fajitas 1 lb chicken breast cut fajita style 2 bell peppers-I like the yellow/orange/red ones cut fajita style 1/2 onion sliced 1/2 packet Frontera ground beef taco sauce Mix all together and spread out on a sheet pan. Parchment lined makes clean up easier. Bake at 400 degrees for 20 minutes or until chicken is done. Serve with flour or corn tortillas, sour cream, lime, cheese etc. or serve over rice. And of course a Margarita to go with it. I heated up leftovers the next morning and added eggs. Made a great omlet. Double the recipe to use the whole packet. This was so easy and so good. I will be making it regularly. I picked up the fajita sauce also but haven't tried it yet. Frontera Sauce

Way too much sodium for me. It's easy to make fajitas from scratch BTW.

Their green enchilada sauce is a fave around here. When I have a little more time I've been using this fajita seasoning recipe. Scroll, scroll, scroll...I know bloggers do this for advertising sake, but some are ridiculous. Love it when they put a link that takes you right to the recipe. I printed yours so I don't have to do that again. I have a similar recipe that adds a little brown sugar.
