Here the norm now is cream cheese frosting but way back in the day nothing had cream cheese frosting that I can remember. Red velvet was always topped with a frosting simmered up on the stove, could be a regional thing. Yes cocoa is required, prior to food coloring being used the reaction it had with the vinegar and buttermilk is what caused the reddish color in the batter, makes a fun science project for the kids.

I remember reading a funny thing years ago about a red velvet cake shaped like an armadillo. It had grey icing and when it was cut into it looked like a butchered armadillo. No one could eat it.
It's a Western thing. And yes, we do eat them. At weddings they have 'grooms' cakes, and in places like Texas, NM, etc they will sometimes be shaped like an armadillo since we have them here. They use the red velvet cake to make it look like the inside of a real armadillo. Here is my armadillo cake. It was red velvet and everyone ate it.

For the love of Bast, I HAVE to stop reading the dang food posts. My diet has gone out the window today. Thankfully the grocery store doesn't have a drive up window or I would be big as a house.

How cute is that cake??? Looks yummy too.
I'm interested in the vinegar as an ingredient - must surely give a different flavour. Red food colouring used to be made of beetles, or beetles' legs or something and it did have a flavour. I'd forgotten that, thanks for reminding me.

Heck with the red velvet go straight for the sheet cakes, white cake with white icing and vanilla mousse in between the layers. It is like a little slice of heaven. The mousse tastes like a little bit of cheese cake in the middle. Around here you can get 1/2 sheet cake for about $15.00 or so. They are so good I have to resist celebrating something every week, lol.

The supermarket had run out of the cupcakes! Apparently they go very quickly, So now I have to stalk the cupcake aisle at the time they're put out.
Another supermarket has them but their cakes are notoriously horrible.

Hope you can find them now.
HEB (grocery chain) had the little Red Velvet ones before Valentines but they don't carry them any other time.
Hopefully Costco will be done with them until next Valentines too.

Oh, don't get me wrong, I love all kinds of cake! But I'm on a mission for the red velvet.
A friend had some in a cafe the other day, it was called "Red Carpet" cake. Apparently it was dry and chewy like carpet, too.

Well, I always thought they were there all the time, but I don't check every week. Seems like they're there all the time They also have a red velvet cake in the bakery section, which I think is there all the time. I've always assumed it to be the same as the cupcakes, just in cake form. Also, can't you order cakes from Costco? IDK, I try to stay out of that section as much as possible.

Yes you can order sheet cakes from Costco, they are very inexpensive in my opinion and taste fantastic. You can also pick a pre made sheet cake they always have a variety in the bakery and they will add names or occasions to it. I have used them for years for all celebrations because the cake/icing are always good. Grocery store cakes are inconsistent and there is nothing worse than bad icing.

I don't need to be finding those cupcakes every time I go to Costco.
I am not as tempted to buy the whole cake because my fear of too tight jeans kicks in but the cupcakes are not as easy to pass by.
I have to go back to that section because that is where the cheese bagels hang out.
Yes, it is definitely all about the frosting.
